Apple and ginger compote

Ingredients

1kg green apples
1.5inch ginger thinly sliced
50gr sugar
juice of 1 lemon

Method

Peel, core and cut the apples into 2cm chunks. Add all ingredients into a heavy saucepan on a medium heat and stir to combine. Once its bubbling, lower the heat, cover and cook for 30 minutes until the apples are soft.
