SERVES 4 QUICHES
1 roll of puff pastry
½ cup heavy cream
½ cup grated cheese
½ cup soft goats cheese
16 cherry tomatoes
Mixed micro leaves
Heat the oven to 180 °C. Lightly grease your quiche tins and fill them with a layer of puff pastry. Mix together the heavy cream, egg and grated cheese, and pour into the prepared tins until half a centimetre under the rim. Drop 4 cherry tomatoes into each quiche and crumble over the goats cheese. Put the quiches into the preheated oven for 25-30 minutes.
Toss the micro leaves with a little balsamic vinegar and top the quiches with it once you’re about to serve them.
