MAKES 8 WRAPS
3 small heads of lettuce
500 gr cooked shrimp
2 avocados, halved and thinly sliced
½ cucumber, in thin slices
2 spring onions, thinly sliced lengthwise
4 tbsp. hoisin sauce
1 tbsp. soy sauce
1 tsp honey
1 tsp fish sauce
Cut the biggest leaves of the lettuce and store them in ice water to keep them crisp. Was hand dry the shrimp. For the sauce, mix the hoisin, soy, honey and fish sauce together.
Assemble the wraps by layering avocado, cucumber, spring onion and shrimp on each lettuce leave. Top with the sauce and radish cress.
