One-pot cod with chorizo and beans

FOR 3 PEOPLE

Ingredients

½ chorizo, in thin slices
1 onion, chopped
2 cloves garlic, chopped
1 tbsp smoked paprika powder
2 tbsp sugar
Pinch of saffron threads
1 cup tomato sauce
1 cup of white wine
1 tbsp lemon juice
1 cup white beans
1 cup chick peas
3 thick cod fillets
Salt and pepper
Small bunch of parsley, finely chopped
Lemon parts to serve

Method

In a wide saute pan, fry the chorizo in a little olive oil until starting to char. Transfer the chorizo to a plate. Add a little more oil to the pan and saute the onion and garlic until translucent. Add the paprika, sugar and saffron and cook for another minute. Add the tomato sauce and white wine and bring to a boil. Season the sauce with lemon, salt and pepper. Rinse the beans and chick peas and add to the sauce, together with the chorizo.

Preheat the grill of the oven to 200 °C. Place the cod fillets in the sauce, sprinkle over some olive oil and season with salt and pepper. Put the pan in the oven for 7-10 minutes, until the fish is just cooked through. Serve the dish sprinkled with parsley and extra lemon parts to squeeze over.
