3 garlic cloves
400gr chopped mixed mushrooms
½ savoy cabbage cut in fine strips
2 sprigs of thyme
50gr walnuts roughly chopped freshly grated parmesan cheese
3 tbsp. olive oil
Salt and pepper to taste
Heat the olive oil in a skillet over medium heat. Finely chop the garlic cloves and cook for 2 minutes. Add the mushrooms, thyme, salt and pepper and sauté for 5 minutes. Add the cabbage and 2tbsp. of water. Let it cook for another 8 minutes, stirring occasionally and adding more water if it feels a bit dry. Bring a large saucepan of salted water to a boil. Cook the pasta according to packet instructions. Drain pasta well, add to the skillet and toss together until the pasta is evenly coated.
Serve topped with walnuts and freshly grated Parmesan cheese.
