450ml fresh pomegranate juice
4 tbsp. pomegranate molasses
225ml apple vinegar
100g granulated or caster sugar
6-8 thyme sprigs
50g pomegranate seeds, to serve
Crushed ice, to serve
1 litre chilled soda water, to serve
Set a saucepan with the pomegranate juice, molasses, vinegar, sugar and thyme over a medium heat. Bring to the boil briefly then reduce the heat and cook for 2-3 minutes, stirring constantly, until the sugar has dissolved. Leave to cool completely.
Fill a large jug with ice and the pomegranate seeds. Add one-third of the shrub mix (the rest will keep for a week in the fridge in an airtight container) and top up with the chilled soda water. Stir well and serve.
