Watermelon pizza with two toppings

MAKES 2 PIZZAS

Ingredients

Topping 1: Feta, olives and mint
1 slice watermelon
½ cup feta cheese, crumbled
½ cup black olives, pitted and halved
Small bunch of mint
Grated peel and juice of 1 lemon
2 tbsp. olive oil
½ tsp curry powder
Chive flowers

Topping 2: Carpaccio, rucola and yoghurt
Few slices of carpaccio
1 cup rucola leaves
½ shallot, thinly sliced
½ cup yoghurt
1 tbsp. white wine vinegar
1 tsp honey
Cilantro flowers and cress

Method

Topping One
Mix the lemon juice and peel, olive oil and curry powder together and season with salt and pepper. Top the pizza with the toppings and pour over the dressing.

Topping Two
Mix the yoghurt, vinegar and honey together and season with salt and pepper. Top the pizza with the toppings and pour over the dressing.
